Wholemeal bread, sliced, toasted
Tinned chickpeas, rinsed
Sesame paste (tahini)
Dijon mustard, coarse-grained
Celery, finely sliced
Gherkins, thinly sliced
Onion, red, finely chopped
Chicory, cut into strips
Lemon, juice of
Salt and pepper, to taste
- Place the chickpeas in a bowl. Add the sesame paste (tahini), mustard and honey. Roughly mash with a fork. Add the celery, gherkins, onion and capers, mix and season with salt and pepper.
- Marinate the chicory in the olive oil and lemon juice and season with salt and pepper.
- Serve the chicory salad. Spread the mashed chickpeas and tahini onto the slices of bread and also serve.
