  • 4 Salmon pavés, 150 g each
  • 1 tsp. Olive oil
  • 600 g Gnocchi
  • 1 Bell pepper, red, coarsely chopped
  • 1 Bell pepper, yellow, coarsely chopped
  • 1 Courgette, coarsely chopped
  • 2 Spring onions, sliced into rings
  • 2 Cloves Garlic, pressed
  • 8 Thyme, sprigs
  • 1 tbs. Olive oil
  • 150 g Low-fat quark
  • 200 g Tomatoes, quartered
  • 1 tbs. Olive oil
  • ½ Lemon, juice of
  • 1 tsp. Paprika powder
  • Salt and pepper, to taste

Preparation

  1. Preheat the oven to 180°C using the fan. Season the salmon pavés with salt and pepper, briefly pan-fry in olive oil and place on a baking tray.
  2. Cook the gnocchi in a saucepan of salted water until they rise to the top. Drain and spread out on the baking tray. Add the bell peppers, courgette, spring onions and garlic to the baking tray and mix together with the gnocchi, sprigs of thyme and olive oil, and season with salt and pepper.
  3. Bake everything in the oven for approx. 10 min. until the salmon is cooked.
  4. In the meantime, roughly purée the low-fat quark in a food mixer with the tomatoes, olive oil and lemon juice, and season with paprika, salt and pepper. Take the baking tray out of the oven and plate up everything. Dress with the tomato quark.
