  • 400 g wholemeal flour
  • 1 tsp. salt
  • 1 yeast cube or 1 sachet of dry yeast
  • 250 ml apple juice
  • 30 g soft butter
  • 1 egg


  1. If using fresh yeast: crumble the cube and dissolve in the apple juice, otherwise, mix the dry yeast into the flour
  2. Knead the wholemeal flour with the butter
  3. Add the salt
  4. Add the liquid yeast mixture to the flour, otherwise, miss this step out
  5. Knead to form a soft dough, cover and leave to double in size (takes approx. 1 hour)
  6. Quarter the dough and put a little aside for decorating the men afterwards
  7. Knead each piece of dough into an oval, cut into the dough to make the arms and legs and shape the dough at one end into a head
  8. Use the remaining dough to make neckerchiefs or caps and press on. 
  9. Beat the egg and brush the Christmas bread men with it
  10. Bake in a preheated oven at 180° for 25-30 minutes
